Don't waste your Christmas leftovers

Thinking of throwing away your Christmas leftovers? Think again when you can create so many delicious and creative meals that will help you save money and the planet.

Here are a few of our favourites: 

Roast dinner wrap 

Ingredients

  • 1 wrap
  • Mayonnaise (or your favourite sauce)
  • Leftover stuffing
  • Leftover chicken/turkey
  • Leftover cheese
  • Cranberry sauce
  • Gravy

You can also add any other leftovers you have, like parsnips or pigs in blankets. 

Method

  1. Lay your wrap on a plate or board. Place the mayonnaise, stuffing, meat, a drizzle of gravy, cheese and cranberry sauce in the centre of the wrap. 
  2. Wrap by folding over the sides, then folding over the bottom and top of the wrap to seal. 
  3. In a frying pan on medium-high heat, place the wrap seal-side down and fry until golden brown, then flip and repeat.
  4. Cut in half and enjoy! Have a dipping pot of gravy on the side to make it extra saucy. 

Smashed roast potatoes 

Ingredients

  • Leftover roasties
  • Olive oil
  • Your favourite seasonings
  • Sour cream and chive dip (or your favourite dip)

Method

  1. Crush a single roast potato with the bottom of a glass, then repeat for each potato. 
  2. Brush each smashed potato with olive oil and season well (salt, pepper, herbs).
  3. Cook in the oven at 200ΒΊC for 15-20 minutes. 
  4. Serve with your preferred dipping sauce. 

Boxing Day bubble and squeak 

Ingredients

  • All of your leftover ingredients (e.g. pigs in blankets, turkey etc.)
  • Potatoes (the same weight as your leftovers)
  • Salt and pepper to taste
  • Cranberry chutney, to serve
  • 100g plain flour, for dusting
  • 2 tbsp leftover cooking oil/duck fat
  • 1 tbsp butter

Method

  1. Peel and chop your potatoes before boiling in salted water until cooked through. 
  2. Chop up all of your favourite leftovers and mix in a bowl with the potatoes until a thick mixture. 
  3. Using your hands, roll the mixture into balls before moulding into patties and dusting in flour (you can do this without flour to make it gluten-free, it just helps them to go extra crispy).
  4. Place in an oiled frying pan over medium-high heat and fry until heated through and golden brown.
  5. Serve with a big spoon of cranberry chutney.
