Vegetable Thai Green Curry 🍛
Great if you just want something tasty and quick, or a meal you can meal prep to help you save money and time during the week!
Ingredients
- 3-4 tbsp Thai curry paste
- 200ml coconut milk
- 2 tsp garlic
- 2 tsp ginger
- 3 green or red chillies
- 1/3rd cup of mixed veggies (like peas, carrots, broccoli, beans, corn)
- 1/4 tsp sugar
- 1 tsp lime juice
- Salt to taste
- Coriander to garnish
Method
- Par-boil your vegetables, and chop the peppers and chillies into thin strips.
- Add oil to a pan and sauté your ginger, garlic and chillies. Add the peppers and let them cook.
- Add the rest of your veggies, sauté them on a medium heat for 2-3 minutes.
- Add your green Thai curry paste, coating the vegetables and stirring regularly. Let this simmer for 4-5 minutes while stirring constantly.
- Lower the heat slightly and add the coconut milk to the pan. You can add some water to adjust consistency.
- Let the curry boil for about 5-10 minutes on a medium heat until its colour changes and the oil from the coconut milk is slightly released.
- Add some lime juice and garnish with coriander.
Serve hot with fluffy white rice! 🍚
