Vegetable Thai Green Curry 🍛

Great if you just want something tasty and quick, or a meal you can meal prep to help you save money and time during the week! 

Ingredients

  • 3-4 tbsp Thai curry paste
  • 200ml coconut milk
  • 2 tsp garlic
  • 2 tsp ginger
  • 3 green or red chillies
  • 1/3rd cup of mixed veggies (like peas, carrots, broccoli, beans, corn) 
  • 1/4 tsp sugar
  • 1 tsp lime juice
  • Salt to taste
  • Coriander to garnish

Method

  1. Par-boil your vegetables, and chop the peppers and chillies into thin strips. 
  2. Add oil to a pan and sauté your ginger, garlic and chillies. Add the peppers and let them cook. 
  3. Add the rest of your veggies, sauté them on a medium heat for 2-3 minutes. 
  4. Add your green Thai curry paste, coating the vegetables and stirring regularly. Let this simmer for 4-5 minutes while stirring constantly. 
  5. Lower the heat slightly and add the coconut milk to the pan. You can add some water to adjust consistency. 
  6. Let the curry boil for about 5-10 minutes on a medium heat until its colour changes and the oil from the coconut milk is slightly released. 
  7. Add some lime juice and garnish with coriander. 

Serve hot with fluffy white rice! 🍚
