Treat yourself to one of the most popular dishes in India, the Chloe Bhature (aka Chana Bhatura) is a simple but tasty meal that may take some time to cook but the results speak for themselves.

Ingredients

  • Soaked chickpeas, 
  • 1 onion, 
  • 2 tomatoes, 
  • Cumin seeds 
  • Coriander powder, 
  • Turmeric powder, 
  • Red chilli powder, 
  • Garam masala, 
  • Oil, 
  • Garlic cloves, 
  • Hunger salt, 
  • All-purpose flour, 
  • Yoghurt, 
  • Baking soda, 
  • Sugar, 
  • Lemon wedges

Method

For the Chole:

  1. Drain the soaked chickpeas and rinse them in water. In a pressure cooker, add the chickpeas along with 4 cups of water and some salt. Cook until the chickpeas are soft and tender.
  2. In a separate pan, heat oil and add cumin seeds. When the cumin seeds start to sizzle, add chopped onions, garlic, and ginger. Fry until the onions are translucent.
  3. Add chopped tomatoes and cook until they turn soft and mushy.
  4. Add coriander powder, turmeric powder, red chilli powder, and garam masala. Mix well and cook for a few minutes.
  5. Add the cooked chickpeas along with some water (as needed) and salt to taste. Simmer for 10-15 minutes until the curry thickens.
  6. Garnish with chopped onions, coriander, and lemon wedges.

For the Bhature:

  1. In a mixing bowl, add all-purpose flour, semolina, baking powder, baking soda, sugar, salt, and oil. Mix well.
  2. Add yoghurt and knead the dough until it is smooth and soft. Cover the dough with a damp cloth and let it rest for 2 hours.
  3. After 2 hours, divide the dough into small balls and roll them out into thin circles.
  4. Heat oil in a deep pan for frying. Fry the bhaturas until they are puffy and golden brown.

Serve the hot and fluffy bhaturas with the spicy and flavorful chole. Enjoy!
