Treat yourself to one of the most popular dishes in India, the Chloe Bhature (aka Chana Bhatura) is a simple but tasty meal that may take some time to cook but the results speak for themselves.
Ingredients
- Soaked chickpeas,
- 1 onion,
- 2 tomatoes,
- Cumin seeds
- Coriander powder,
- Turmeric powder,
- Red chilli powder,
- Garam masala,
- Oil,
- Garlic cloves,
- Hunger salt,
- All-purpose flour,
- Yoghurt,
- Baking soda,
- Sugar,
- Lemon wedges
Method
For the Chole:
- Drain the soaked chickpeas and rinse them in water. In a pressure cooker, add the chickpeas along with 4 cups of water and some salt. Cook until the chickpeas are soft and tender.
- In a separate pan, heat oil and add cumin seeds. When the cumin seeds start to sizzle, add chopped onions, garlic, and ginger. Fry until the onions are translucent.
- Add chopped tomatoes and cook until they turn soft and mushy.
- Add coriander powder, turmeric powder, red chilli powder, and garam masala. Mix well and cook for a few minutes.
- Add the cooked chickpeas along with some water (as needed) and salt to taste. Simmer for 10-15 minutes until the curry thickens.
- Garnish with chopped onions, coriander, and lemon wedges.
For the Bhature:
- In a mixing bowl, add all-purpose flour, semolina, baking powder, baking soda, sugar, salt, and oil. Mix well.
- Add yoghurt and knead the dough until it is smooth and soft. Cover the dough with a damp cloth and let it rest for 2 hours.
- After 2 hours, divide the dough into small balls and roll them out into thin circles.
- Heat oil in a deep pan for frying. Fry the bhaturas until they are puffy and golden brown.
Serve the hot and fluffy bhaturas with the spicy and flavorful chole. Enjoy!
