For my breakfast inspo I decided to make Indian veg fried rice. This is more like a breakfast/lunch combo, and the main reason I choose to take a well-cooked heavy meal at the start of the day is so that I can bring the leftovers for lunch.
I avoid eating heavy meals before I sleep so my sleep is uninterrupted and relaxing. This may seem out of sync for some but the wisdom goes, 'breakfast like a king; lunch like a prince; dinner like a pauper'. During exams, I like to read late at night so it makes even more sense to my study habits that I eat a light dinner, which subsequently makes me very hungry in the morning.
The recipe is straightforward and it can be prepared within 30 mins.
Ingredients:
- Basmati rice
- Potato
- Tomatoes
- Red onion
- Peas
- Optional veg (carrots, cabbage, broccoli, mushrooms)
- Spices (chilli powder, coriander, cumin)
- Garlic
- Salt
- Oil
Method:
- We start will boiling the rice, it boils for about 10 mins
- In the meantime we cut the veggies potatoes, tomatoes, and onions are essential; otherwise, everything goes - take carrots, garlic, cabbage, broccoli, and even mushroom are good options.
- Then you take the rice off of the heat to let it cool off
- Take some oil (or butter) in a pan. Add the veggies to cook. Start with potatoes, because they take longer to cook.
- Add spices - I like to add red chilli powder, coriander powder, and cumin powder (of course salt to taste)
- Cook the veggies with the spices for 2-3 mins.
- Add the rice (make sure it's not steaming anymore)
- Mix it all up and serve with yoghurt
This breakfast is easy to make, you can't go wrong, and a healthy meal to start the day.
