Breakfast inspo for exam season

A hearty breakfast to start the day!

For my breakfast inspo I decided to make Indian veg fried rice. This is more like a breakfast/lunch combo, and the main reason I choose to take a well-cooked heavy meal at the start of the day is so that I can bring the leftovers for lunch.

I avoid eating heavy meals before I sleep so my sleep is uninterrupted and relaxing. This may seem out of sync for some but the wisdom goes, 'breakfast like a king; lunch like a prince; dinner like a pauper'. During exams, I like to read late at night so it makes even more sense to my study habits that I eat a light dinner, which subsequently makes me very hungry in the morning.

The recipe is straightforward and it can be prepared within 30 mins.

Ingredients:

  • Basmati rice
  • Potato
  • Tomatoes
  • Red onion
  • Peas
  • Optional veg (carrots, cabbage, broccoli, mushrooms)
  • Spices (chilli powder, coriander, cumin)
  • Garlic
  • Salt
  • Oil

Method:

  1. We start will boiling the rice, it boils for about 10 mins 
  2. In the meantime we cut the veggies potatoes, tomatoes, and onions are essential; otherwise, everything goes - take carrots, garlic, cabbage, broccoli, and even mushroom are good options. 
  3. Then you take the rice off of the heat to let it cool off 
  4. Take some oil (or butter) in a pan. Add the veggies to cook. Start with potatoes, because they take longer to cook. 
  5. Add spices - I like to add red chilli powder, coriander powder, and cumin powder (of course salt to taste) 
  6. Cook the veggies with the spices for 2-3 mins. 
  7. Add the rice (make sure it's not steaming anymore) 
  8. Mix it all up and serve with yoghurt 

This breakfast is easy to make, you can't go wrong, and a healthy meal to start the day.
