Easy, budget-friendly and delicious
With National Chocolate Cake Day just around the corner on January 27th, it’s the perfect excuse to whip up some irresistible vegan chocolate cake recipes!
Chocolate Fudge Cake
Ingredients
- 350ml unsweetened almond milk-alternative
- ½ tbsp cider vinegar
- 150ml sunflower oil, plus extra for greasing
- 1sp vanilla extract
- 220g self-raising flour
- 1sp baking powder
- 80g cocoa powder
For the icing
- 200g dairy-free spread
- 220g icing sugar
- 40g cocoa powder
- 1sp icing sugar
Method
- Heat the oven to gas 4, 180°C, fan 160°C. Grease and line 3 x 18cm loose-bottomed cake tins with nonstick baking paper. Mix the almond milk alternative and vinegar together in a mixing bowl, then whisk in the sugar, sunflower oil and vanilla until well combined.
- Mix the flour, baking powder and cocoa powder together in another bowl, then fold into the wet mixture until just combined. Divide between the cake tins, smooth the tops, then bake for 20 minutes, until a skewer inserted into the centre comes out clean. Allow to cool in the tins for 15 minutes, then remove to a wire rack to cool completely.
- Meanwhile, make the icing. Put the spread into a mixing bowl. Mix the icing sugar and cocoa powder together in a separate bowl, then gradually whisk into the spread until well combined. Whisk in the vanilla. Chill for 15 minutes or until ready to ice the cake.
Chocolate chip muffin
Ingredients
- ½ tbsp instant coffee
- 200g plain flour
- 130g light brown sugar
- 2 tsp baking powder
- 40g cocoa powder
- 50ml sunflower oil
- 50g dark dairy- free chocolate, chopped into chunks
Method
- Heat the oven to gas 4, 180°C, fan 160°C. Line an 8-hole muffin tin with 8 muffin cases. Mix the coffee with 1 tbsp boiling water until dissolved, then set aside to cool completely.
- Stir the flour, sugar, baking powder and cocoa powder together in a medium mixing bowl, then pour in the coffee, sunflower oil and 220ml water and stir until combined with a wooden spoon. Add the chocolate and stir until incorporated.
- Spoon into the prepared muffin cases and bake for 20 minutes. Allow to cool completely in the tin.
