Sticky Peanut Butter Noodles 🍜
First time living away from home and learning how to cook? Sanjana has got your back with a simple and budget-friendly recipe she has been practicing at home before moving to London for uni. Here's her version of sticky peanut butter noodles:
Ingredients
- Pack of egg noodles
- 2 tbsp soy sauce
- 1 tbsp peanut butter (I chose crunchy)
- 1/2 tsp chilli oil
- 1 tbsp maple syrup
- 1 tsp brown sugar
- 3 large cloves of garlic
- 1 tsp sesame oil
Method
- Bring some water in a saucepan to the boil and add your egg noodles, stirring occasionally until they soften and break apart.
- Once cooked according to the packet instructions, drain your noodles and set aside. Save the starchy drained water for later.
- In a clean bowl, add your chilli oil (add more if you like more spice), soy sauce, peanut butter, maple syrup and brown sugar. Stir well to combine, trying to get it as smooth as possible.
- Chop all of your garlic finely.
- Heat up a pan and add your sesame oil and garlic. Sauté this until your garlic is golden brown.
- Carefully pour your hot garlic and oil mixture into the same bowl as your peanut butter sauce. Here is where you'll also add in some drained noodle water to get a good consistency. Stir well again to combine.
- Add your cooked noodles into the sauce mixture and stir to coat evenly.
Once you're done, you can add any extras or toppings you like from chopped spring onion to sesame seeds.
