Vegan friendly bread poha recipe

Perfect for a filling breakfast or quick lunch!

Bread Poha is a quick, flavourful dish made with bread, spices, and simple ingredients.

Ingredients (Serves 2)

  • 4 slices of bread (white or wholemeal), cut into bite-sized cubes
  • 1 tbsp vegetable oil
  • 1 small onion, finely chopped
  • 1 medium tomato, chopped
  • 1 green chilli, finely chopped (optional, for heat)
  • 1/2 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 1/4 tsp red chilli powder (optional)
  • Salt, to taste
  • 1 handful fresh coriander, chopped
  • 1 tsp lemon juice (optional)

Method

1. Prepare the bread

  • Cut the bread into small cubes and set aside.

2. Heat the oil and temper the mustard seeds

  • Heat the oil in a large frying pan over medium heat.
  • Add the mustard seeds and let them crackle for a few seconds.

3. Sauté the onion

  • Add the chopped onion and sauté for 2-3 minutes until soft and translucent.
  • If using, stir in the green chilli and sauté for 1 minute.

4. Add the tomatoes and spices

  • Toss in the chopped tomatoes, turmeric powder, red chilli powder (if using), and salt.
  • Cook for 2-3 minutes until the tomatoes soften and break down into a sauce.

5. Mix in the bread

  • Add the bread cubes to the pan and gently mix to coat them with the spiced mixture.
  • Cook for 2-3 minutes, stirring occasionally, until the bread is lightly toasted and absorbs the flavours.

6. Garnish and Serve

  • Turn off the heat and sprinkle fresh coriander on top.
  • Add a squeeze of lemon juice for a bright, tangy finish (optional).
