Ingredients (4 servings)
- 250g basmati rice
- 4 large eggs
- 2 tbsp vegetable oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 carrot, grated
- 100g frozen peas
- 2 tsp garam masala (or any masala seasoning you like)
- ½ tsp turmeric (optional)
- Salt and pepper, to taste
- Fresh coriander, for garnish (optional)
Method
- Cook the rice: Rinse the basmati rice under cold water until the water runs clear. Cook according to the package instructions, then set aside to cool.
- Prepare the eggs: Heat 1 tbsp of oil in a large frying pan over medium heat. Crack in the eggs and scramble until just cooked. Remove from the pan and set aside.
- Sauté the vegetables: In the same pan, add the remaining oil and sauté the onion and garlic until softened. Add the bell pepper, carrot, and peas, and cook for 3-4 minutes until tender.
- Add the spices: Stir in the garam masala, turmeric (if using), and a pinch of salt and pepper. Mix well to coat the vegetables in the spices.
- Combine everything: Add the cooked rice and scrambled eggs to the pan. Mix thoroughly to combine, ensuring the rice and vegetables are evenly coated with the spices. Cook for an additional 2-3 minutes until heated through.
- Garnish and serve: Divide the masala rice into meal prep containers, garnish with fresh coriander if desired, and let cool before storing in the fridge.
