Meal prep made easy!

This easy and flavourful masala rice is perfect if you're looking for a budget-friendly, nutritious, and versatile meal prep option. With simple ingredients like rice, eggs, vegetables, and masala seasoning, you can enjoy this dish throughout the week.

Ingredients (4 servings)

  • 250g basmati rice
  • 4 large eggs
  • 2 tbsp vegetable oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 carrot, grated
  • 100g frozen peas
  • 2 tsp garam masala (or any masala seasoning you like)
  • ½ tsp turmeric (optional)
  • Salt and pepper, to taste
  • Fresh coriander, for garnish (optional)

Method

  1. Cook the rice: Rinse the basmati rice under cold water until the water runs clear. Cook according to the package instructions, then set aside to cool.
  2. Prepare the eggs: Heat 1 tbsp of oil in a large frying pan over medium heat. Crack in the eggs and scramble until just cooked. Remove from the pan and set aside.
  3. Sauté the vegetables: In the same pan, add the remaining oil and sauté the onion and garlic until softened. Add the bell pepper, carrot, and peas, and cook for 3-4 minutes until tender.
  4. Add the spices: Stir in the garam masala, turmeric (if using), and a pinch of salt and pepper. Mix well to coat the vegetables in the spices.
  5. Combine everything: Add the cooked rice and scrambled eggs to the pan. Mix thoroughly to combine, ensuring the rice and vegetables are evenly coated with the spices. Cook for an additional 2-3 minutes until heated through.
  6. Garnish and serve: Divide the masala rice into meal prep containers, garnish with fresh coriander if desired, and let cool before storing in the fridge.
